Whenever I see local, fresh, baby bok choy, my dinner plans change–Stir Fried Baby Bok Choy comes first. I love to see them when they are still in their perfect, beautiful shape, basically the day I get them. The leaves are bright green and very delicate, and I’m always afraid they might get damaged if I keep them in a fridge.
The perfect combination of a little bit sweet, savory, and a quick saute on medium heat, gives this Stir Fried Baby Bok Choy dish a fresh flavor with the crunchiness you can’t get from other kinds of vegetable.
It’s spring now, and you can see baby bok choy everywhere. Get some and come with me, I’ll show you how to cook them the easiest way.
Here are what you need for cooking Stir Fried Baby Bok Choy dish:
- A few small-to-medium size heads of baby bok choy.
- 2-3 cloves of garlic.
- 2 TBSP or a little more of soy sauce.
- 1-2 TSP (5-10 g) of sugar. (I use unrefined coconut sugar)
- 1 TBSP of coconut oil or another kind of cooking oil.
Note: Use these measurements as a guide and adjust the amount of everything to your own needs.
How:
- Rinse the baby bok choy thoroughly.
- Detach outer leaves and leave them whole. Cut the inner leaves lengthwise and try to keep them attached (my preference), but you can detach all of them if you like.
- Finely chop the garlic.
- In a frying pan on medium heat, heat the coconut oil and fry the garlic until golden brown.
- Put the baby bok choy in, and saute until they are wilted.
- Add the soy sauce followed by the sugar, and saute everything thoroughly to make sure all of the bok choy is covered with the soy sauce and sugar. Adjust the taste to your own liking.
- Done. Serve right away as a side dish, or enjoy it with a bowl of rice as a light meal!
