Feeding my own vegetarian child, I make sure she gets what her body needs to grow healthy, and Spinach & Mushroom Omelettes are one of the dishes I cook often. Adding some vegetables into the omelette is an easy way to get vegetables into your kids’ bodies. They taste so good that most kids don’t mind at all–actually they even like eating healthy once they see how good it can taste.
Even though there are a few kinds of vegetables you can add to your omelette, Spinach & Mushroom Omelettes are what I usually make. Cooking this omelette until its slightly crispy brown on both sides make it fun to eat.
Ready to whip up a quick meal?
Here is what you need:
Ingredients:
- 2 eggs (Pasture Raised Eggs are best)
- 1-2 mushrooms
- A handful of spinach
- 1-2 TSP Coconut oil (or other good cooking oil)
- 1 TSP soy sauce (if you like salty, add a little bit more)
Instructions:
- Crack the eggs and add soy sauce. Slightly beat beat them and set aside.
- Slice the mushroom and add it followed by spinach.
- Mix everything together and set aside.
- In a small frying pan, heat the oil on medium heat until its hot.
- Add the egg mixture and cook until the bottom turns brown.
- Cover the pan with a plate and flip the egg, slide it back to cook the other side.
- When it turns brown, it’s done.
- Serv warm as is or with a bowl of warm rice–enjoy!
