However, once I got the sourdough starter started successfully, I learned to make no-knead sourdough that my family enjoys very much. Since then, no-knead sourdough bread is a recipe I make often.
For a long time, I was intimidated with anything that involved sourdough. Coming from a no-baking background, it’s easy to be scared away from using sourdough.
However, if you have sourdough starter in your family, you probably know that you quickly end up with too much of it. Even though most people discard it when they have too much, I don’t feel right doing so. I try to experiment using it to make different recipes such as sourdough pancakes, and crepes.
Recently, my favorite thing to use the discarded starter for this Sourdough-Kale Crepes with Kale Powder.
This recipe is a great way to add green kale to your diet while enjoying delicious crepes. It’s healthy, easy, quick and most of all– it’s amazingly tasty!

Ingredients:
Note: Make about 8-9 crepes
- 1 ½ -2 cups (375-500 g) of sourdough starter
- 2 eggs (pasture raised eggs are best)
- 1 ½ TBSP (21 g) kale powder
- 1 ½ TBSP (21 g) good sugar
- ½ TSP (2.5 g) good salt
- 1-2 TBSP (14-28 g) of good cooking oil plus ½ – 1 TSP (2.5-5 g) for greasing the pan
Instructions:
- In a mixing bowl, combine everything together and mix well.
- On low-medium heat, use a paper towel to grease a pan with cooking oil.
- Ladle the batter on the pan and use the bottom of the ladle to spread the batter out. You can make it thin to your liking.
- Flip when you see bubbles and cook the other side.
- Repeat until done. Enjoy!
