Cauliflower Fried Rice (Kid’s Special)

Looking for a healthy and tasty dish that is full of vegetables for kids? This Cauliflower Fried Rice is just what you want. It’s easy to make, and so tasty most kids love it right away!

Even though I have no problem feeding my own daughter vegetables, I still try to make new dishes that are fun for her, and for us to eat. Recently Cauliflower Fried Rice has become one of her favorite dishes.

I’m very happy that she likes this dish as it’s so healthy, and easy to make. It’s rich with flavor from simple ingredients–all are vegetables. Besides being very tasty, and easy to make, it’s also very beautiful.

I use pasture raised eggs to make this Cauliflower Fried Rice, but most of the time I replace eggs with homemade sprouted tofu.

To make it more appealing for most kids (and grown ups) I like to cut the vegetables into bite sizes. Smaller pieces of vegetables are easier to eat and take less time to cook.cut vegetables for cauliflower fried rice (kid's special)

I have been using a knife that can cut carrots into a caterpillar shapes since my daughter was very little. She loves her carrots cut that way and tends to enjoy them more.

Ingredients:

Note: this makes about 2 kid-servings

  1. 1 cup (128 g) cauliflower rice.
  2. About  ¼ cup (32 g) cup of each vegetable: Carrots, peas & corn (I use frozen when I can’t get fresh), broccoli, tomatoes, and onions
  3. 1 clove of garlic
  4. An egg (pasture or free range preferably)
  5. 1 TBSP + 1TSP (15 g + 5 g) soy sauce
  6. ½ TBSP (7.5 g) sugar 
  7. 1 TBSP + 1 TSP (15 g + 5 g) of good cooking oil (I use coconut oil)
  8. A little bit of black pepper

Instructions:

  1. Prepare the cauliflower rice. You can use a box grater or food processor.
  2. If you use frozen peas and corn, let them thaw while cutting all the vegetables.
  3. Cut the vegetables into small bite sizes. (For the tomatoes, remove the seeds as they will make the finished fried rice soggy).
  4. Finely chop the garlic.
  5. On medium heat, heat a little bit of the oil in a frying pan and fry the egg. Add a little bit of soy sauce, and cook until it looks golden crisp, and set it aside.
  6. In the same frying pan, add more oil and fry the garlic until golden brown, then add the onion, and fry together with onion until it looks translucent.
  7. When the onion looks translucent, add the carrots and sauté for a few minutes until they look soft then add the rest of the vegetables and sauté until they look wilted.
  8. Season with the soy sauce, followed by the sugar and mix well.
  9. Now, add the cauliflower rice. Stir and cook for a few minutes (it doesn’t take long to cook).adding cauliflower rice
  10. When everything is well cooked, add a little bit of ground black pepper. Adjust the taste to your own liking, and done.serving cauliflower fried rice (kid's special)
  11. Serve with a few pieces of cucumber and a wedge of lime. Enjoy!serve with cucumbers and lime wedge
