I discovered this method by acidentally leaving a bag of shiitake out of the fridge and totally forgotten about it.
By the time I realized that I didn’t put the shiitake in the fridge, it was all dried. It was exactly like the dried ones I bought from the store, and I stop buying dried shiitake ever since.
The best thing about drying your own is you can do it during the mushroom season. This way you can preserve the freshest shiitake while it is cheaper. Also, drying your own there’s no need to worry about using any preservatives.

Things you need:
- Shiitake mushrooms
- A knife, a soft bristle brush, and a basket with a flat bottom
Instructions:
- Cut the shiitake stems.
- Brush off any dust and dirt.
- Lay them in the basket and leave it in the room to dry. You can also take it outside to dry when it’s not raining.
- Leave it alone for a few days.
- When it’s completely dried, store it in an airtight glass container It will last for a long time.
